Ingredients

  • 2 cups uncooked penne rigate
  • 2 chicken breasts
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 1 cup sour cream or Greek yogurt
  • 4 oz cream cheese softened
  • 1 cup half and half or whole milk
  • 1 package dry Ranch mix
  • 5 oz frozen spinach or 4 ounces fresh
  • 1 cup shredded mozzarella cheese

Instructions

  • Bring a large pot of salted water to a boil. Add the uncooked penne rigate and cook according to package instructions until al dente. Drain and set aside.
  • Season the chicken breasts with kosher salt and black pepper. In a skillet over medium heat, add a drizzle of oil and cook chicken for 6-7 minutes per side, until fully cooked. Remove and let rest before slicing into bite-sized pieces.
  • In the same skillet, lower heat and add all-purpose flour. Stir for about a minute to cook out raw flour taste. Add sour cream (or Greek yogurt), softened cream cheese, half and half (or whole milk), and Ranch mix. Stir until creamy and well combined.
  • Add frozen (or fresh) spinach to the sauce. Stir until heated through and evenly distributed. Fold in sliced chicken.
  • Add cooked penne rigate to skillet with creamy spinach sauce. Gently mix to coat pasta well.
  • Sprinkle shredded mozzarella cheese over pasta mixture. Cover skillet with lid for a few minutes until cheese melts and becomes gooey.
  • Give pasta a final stir. Serve hot, garnished with additional mozzarella or fresh herbs if desired. Enjoy!
