Ingredients

  • 1 pound ground turkey
  • 1 medium zucchini grated
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • 4 large lettuce leaves for wraps
  • 1/2 cup zucchini relish
  • tomatoes sliced
  • red onion sliced
  • avocado sliced

Instructions

  • Start by washing the medium zucchini thoroughly. Using a box grater, grate the zucchini finely. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture.
  • In a large mixing bowl, combine the ground turkey, grated zucchini, breadcrumbs, and egg. Add garlic powder, onion powder, dried oregano, salt, and pepper. Mix gently but thoroughly until evenly incorporated.
  • Divide the mixture into four equal portions. Shape each portion into a round patty about 3/4 inch thick. Place the patties on a plate or tray lined with parchment paper.
  • Heat a large skillet over medium heat and add a small amount of oil. Cook the turkey patties for 5-6 minutes on each side until fully cooked and browned.
  • Lay out the large lettuce leaves. Place a cooked patty on each leaf. Spoon about 2 tablespoons of zucchini relish over the patty. Top with sliced tomatoes, red onion, and avocado.
  • Carefully fold or roll the lettuce leaves around the fillings to form wraps. Serve immediately while warm and juicy.
