  • 1 largezucchini cut into 1/4-inch slices
  • 1/4 cupmarinara sauce
  • 1/2 cupmini pepperoni slices
  • 1/4 cupblack olives sliced
  • 1 cupmozzarella cheese freshly shredded
  • 1 teaspoonItalian seasoning
  • 1 teaspoonred pepper flakes

  • If your zucchini is not already sliced, cut the 1 large zucchini crosswise into 1/4-inch rounds and pat the slices dry with a paper towel.
  • Choose your cooking method: for oven — preheat oven to 400°F and line a baking sheet with parchment paper; for air fryer — set the air fryer to 400°F (preheat if your model recommends).
  • Arrange the zucchini slices in a single layer on a large plate (for staging) or directly on the lined baking sheet. Work in batches if needed to avoid overlap.
  • Assemble the bites: spread the 1/4 cup marinara sauce evenly over the zucchini slices (about 1 teaspoon per slice), top each slice with pieces from the 1/2 cup mini pepperoni and the 1/4 cup sliced black olives, then sprinkle the 1 cup freshly shredded mozzarella over the slices. Evenly sprinkle the 1 teaspoon Italian seasoning and 1 teaspoon red pepper flakes over all the bites.
  • Air fryer method: place the assembled zucchini slices in a single layer in the air fryer basket (cook in batches if necessary). Cook at 400°F for 5 minutes, or until the cheese has melted and the edges are lightly browned. Remove and serve immediately.
  • Oven method: place the assembled zucchini slices on the prepared baking sheet in a single layer. Bake at 400°F for 8 minutes, then switch to broil and broil 3–4 minutes more until the cheese is golden brown and bubbling (watch closely to avoid burning). Remove and serve immediately.
  • Let the bites cool for a minute if needed before serving.

Notes

The larger zucchinis are much better for placing the ingredients on top.
If using medium sized zucchinis, cut them on a diagonal to create a larger surface for placing the toppings on.
Customize the toppings by using your favorite pizza toppings. Experimenting can be fun!
Include some black pepper for additional spice.
Zucchini pizza bites are definitely best served hot and fresh, but can be stored in the refrigerator in an airtight container for up to2 days.
