Ingredients

  • 12 oz soft tofu can substitute with cream cheese or coconut cream for a different texture
  • 6 oz vegan white chocolate chips or cacao butter choose high-quality for the best flavor
  • 1 tbsp sweetener of choice maple syrup, agave nectar, or coconut sugar work well

Instructions

  • Begin by melting the vegan white chocolate chips or cacao butter using a double boiler or microwaving in short bursts, stirring in between to prevent burning. Set aside to cool slightly.
  • In a food processor or blender, add the soft tofu and blend until smooth and creamy, ensuring there are no lumps.
  • Add the melted white chocolate and sweetener to the blended tofu. Blend again until everything is well combined and velvety.
  • Taste the mousse and adjust sweetness by adding more sweetener if desired, then blend again.
  • Transfer the mousse into serving dishes and refrigerate for at least 1-2 hours to allow it to set properly.
  • Once chilled, serve the Vegan White Chocolate Mousse. Garnish with fresh berries, mint leaves, or a sprinkle of cocoa powder if desired.
