Ingredients

  • 4 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 0.5 teaspoon baking powder
  • 4.5 tablespoons nondairy milk such as almond, soy, or oat
  • 1.5 tablespoons oil such as canola or coconut oil
  • 0.75 teaspoon vanilla extract
  • Vegan chocolate chips or sprinkles optional
  • Vegan whipped topping or ice cream optional

Instructions

  • In your microwave-safe mug, mix together the all-purpose flour, granulated sugar, and baking powder. Stir well to ensure that there are no lumps.
  • Add the nondairy milk, oil, and vanilla extract to your dry ingredients. Mix until the batter is smooth and there are no dry spots. If you’re adding chocolate chips or sprinkles, fold them in gently at this stage.
  • Place your mug in the microwave and cook on high for about 1 minute and 30 seconds. Cooking times may vary depending on your microwave, so keep an eye on it as it cooks.
  • After 1 minute and 30 seconds, check to see if your Vegan Mug Cake is done. It should be set in the middle and spring back when touched. If it’s still wet, microwave in additional 10-second intervals until fully cooked.
  • Once cooked, let the mug cake cool for a minute or two. This will help to avoid burning your mouth on the deliciousness that awaits!
  • Top your cake with vegan whipped topping or a scoop of vegan ice cream for an indulgent treat. You could also sprinkle some additional chocolate chips or fresh fruits on top.
