Ingredients

Flax Egg

  • 2 tablespoons ground flaxseed
  • 6 tablespoons dairy-free milk

Wet Ingredients

  • 1 1/2 cups dairy-free milk remaining
  • 1 tablespoon pure maple syrup optional
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1 cup super-fine almond flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

Prepare the Flax Egg

  • In a small bowl, combine 2 tablespoons of ground flaxseed with 6 tablespoons of dairy-free milk. Stir well and let it sit for about 5-10 minutes until it thickens and becomes gel-like.

Mix Wet Ingredients

  • In a large mixing bowl, whisk together the remaining 1 ½ cups of dairy-free milk, the prepared flax egg, 1 tablespoon of pure maple syrup (if using), and 1 teaspoon of vanilla extract until well combined.

Combine Dry Ingredients

  • In another bowl, mix together 1 cup of gluten-free all-purpose flour, 1 cup of super-fine almond flour, 1 tablespoon of baking powder, ¼ teaspoon of ground cinnamon, and ¼ teaspoon of salt.

Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix; a few lumps are perfectly fine!

Cook the Waffles

  • Preheat your waffle iron according to the manufacturer’s instructions. If necessary, lightly spray it with a non-stick cooking spray (make sure it’s oil-free).
  • Pour the batter onto the preheated waffle iron, using about ½ cup of batter per waffle (adjust based on your iron). Close the lid and cook until golden brown and crispy, typically about 5-7 minutes.

Serve

  • Carefully remove the waffles from the iron and serve immediately with your favorite toppings like fresh fruit, nut butter, or a drizzle of maple syrup.
