Ingredients

  • 1 cup cooked black beans drained and rinsed
  • 1 tablespoon fresh lime juice
  • 2 teaspoons taco seasoning
  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon sea salt
  • 2 teaspoons extra-virgin olive oil for sautéing
  • 2 red bell peppers stemmed, seeded, and sliced into thin strips

  • 6 large flour tortillas
  • fresh spinach or lettuce
  • Spanish Rice or Cilantro Lime Rice

Instructions

Prepare the Filling

  • In a mixing bowl, combine the cooked black beans, fresh lime juice, taco seasoning, and sea salt. Use a fork to mash the beans slightly, creating a chunky mixture that’s full of flavor.

Sauté the Vegetables

  • In a large skillet, heat the 2 teaspoons of extra-virgin olive oil over medium heat. Add the sliced red bell peppers and sauté for about 5-7 minutes, or until they become tender and slightly caramelized. Season with sea salt and freshly ground black pepper to taste.

Warm the Tortillas

  • In the same skillet, you can warm the tortillas for about 30 seconds on each side, just until they are pliable and warm.

Assemble the Burrito

  • Lay a warm tortilla flat on a plate. Start with a layer of the black bean mixture, followed by the sautéed bell peppers. Add a handful of fresh spinach or lettuce, a scoop of rice, and your choice of guacamole, pickled red onions, and jalapeño peppers. Don’t forget a sprinkle of fresh cilantro leaves for that extra burst of flavor!

Roll It Up

  • To roll your burrito, fold in the sides and then tightly roll from the bottom up to enclose all the delicious fillings.
