Ingredients

  • 16 ounces tuna fish drained
  • 1/4 cup mayonnaise
  • 1/4 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1 tablespoon Dijon mustard
  • 2 tablespoons parsley chopped
  • Salt and pepper to taste
  • 16 slices bread
  • 8 slices cheddar cheese (more if you want a layer on the bottom)
  • Tomato sliced
  • 1/4 cup butter softened

Instructions

  • In a large mixing bowl, combine the drained tuna fish, mayonnaise, finely chopped celery, red onion, Dijon mustard, and chopped parsley. Mix well until all the ingredients are evenly incorporated. Season with salt and pepper to taste.
  • Lay out the slices of bread on a clean surface. Spread a generous amount of the tuna mixture on half of the slices. Layer one slice of cheddar cheese on top of the tuna mixture. Add a slice of tomato before topping with another slice of bread.
  • Spread softened butter generously on the outside of each sandwich to help achieve a golden-brown crust when cooked.
  • Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on one side until golden brown. Flip and cook the other side for an additional 3-4 minutes. Cover with a lid if you prefer extra melty cheese.
  • Remove the sandwiches from the skillet once golden and cheese is melted. Let cool for a minute, then slice in half and serve warm.
