Ingredients

  • 1 tsp olive oil for sautéing

  • 1/2 cup Avocado Cilantro Ranch Dressing for drizzling

Instructions

Step 1: Prepare the Ingredients

  • Dice leftover turkey breast into small, bite-sized pieces. Mince red bell peppers and scallions. Thaw and drain frozen spinach, rinse black beans.

Step 2: Sauté the Vegetables

  • In a skillet over medium heat, add olive oil. Once hot, add minced red bell peppers and scallions. Sauté 2-3 minutes until softened and fragrant.

Step 3: Add Turkey and Spices

  • Add diced turkey breast, thawed spinach, frozen corn, black beans, jalapeño peppers, cumin, chili powder, and kosher salt. Stir and cook 5-7 minutes until heated through and flavors meld.

Step 4: Build Your Wraps

  • Take a large iceberg lettuce leaf and spoon turkey mixture into the center. Sprinkle with shredded Mexican cheese blend.

Step 5: Drizzle with Dressing

  • Drizzle Avocado Cilantro Ranch Dressing over the turkey filling. Add additional toppings if desired.

Step 6: Wrap and Enjoy!

  • Fold lettuce sides over filling and enjoy immediately. Best served fresh but filling can be prepared ahead and wraps assembled before serving.
