Place the 110-inch whole wheat tortilla on a clean, flat surface.
Spread the 1 tablespoon Dijon mustard (or mustard of your choice) evenly over the tortilla, leaving a small border around the edge.
Arrange the 4 deli slices of turkey evenly over the mustard, slightly overlapping as needed.
Top the turkey with the 4 slices Cheddar cheese.
Scatter the 1/2 cup spinach leaves evenly over the cheese.
If not already cut, cut the 1/2 large apple into 2-inch matchstick pieces. Arrange the apple matchsticks in a single layer so their long sides run in the same direction you will roll the tortilla.
Starting from the edge closest to you, roll the tortilla tightly and evenly into a firm log, tucking the fillings in as you roll.
Using a sharp knife, cut the log crosswise into 8 to 10 pinwheel slices.
Serve the pinwheels immediately or pack them in a lunch box with Kettle Brand chips, fruit, and veggies.
