Turkey Cheddar Apple Pinwheels

A simple lunchbox-friendly pinwheel made with a 10-inch whole wheat tortilla, Dijon mustard, deli turkey, Cheddar, spinach and apple matchsticks.

  • 110- inch whole wheat tortilla
  • 1 tablespoonDijon mustardor mustard of your choice
  • 4 deli slices turkey
  • 4 slicesCheddar cheese
  • 1/2 cupspinach leaves
  • 1/2 large applecut into 2-inch matchstick pieces
  • Kettle Brand chipsfruit and veggies, for packing in the lunch box

  • Place the 110-inch whole wheat tortilla on a clean, flat surface.
  • Spread the 1 tablespoon Dijon mustard (or mustard of your choice) evenly over the tortilla, leaving a small border around the edge.
  • Arrange the 4 deli slices of turkey evenly over the mustard, slightly overlapping as needed.
  • Top the turkey with the 4 slices Cheddar cheese.
  • Scatter the 1/2 cup spinach leaves evenly over the cheese.
  • If not already cut, cut the 1/2 large apple into 2-inch matchstick pieces. Arrange the apple matchsticks in a single layer so their long sides run in the same direction you will roll the tortilla.
  • Starting from the edge closest to you, roll the tortilla tightly and evenly into a firm log, tucking the fillings in as you roll.
  • Using a sharp knife, cut the log crosswise into 8 to 10 pinwheel slices.
  • Serve the pinwheels immediately or pack them in a lunch box with Kettle Brand chips, fruit, and veggies.
