  • Step 1: Prepare the Yeast - In a small bowl, combine the warm water, cane sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.
  • Step 2: Mix the Dry Ingredients - In a large mixing bowl, whisk together the all-purpose flour, bread flour (if using), salt, and baking soda.
  • Step 3: Combine Wet and Dry Ingredients - Once your yeast mixture is frothy, pour it into the bowl with the dry ingredients, along with the warm milk. Mix until just combined.
  • Step 4: Let the Batter Rise - Cover the mixing bowl with a clean kitchen towel and let the batter rise in a warm place for about 45 minutes to 1 hour.
  • Step 5: Heat the Griddle - Preheat your griddle or frying pan over medium heat. Lightly grease it with oil or butter.
  • Step 6: Cook the Crumpets - Lightly oil your crumpet rings and place them on the griddle. Pour about 1/4 cup of batter into each ring.
  • Step 7: Flip and Finish Cooking - Carefully remove the rings, and flip the crumpets over using a spatula. Cook for an additional 2-3 minutes until golden brown.
