Ingredients
18ozcheese tortellini
2smallbroccoli crownschopped into mini florets
1/2mediumonionfinely chopped
1tomatoseeded and diced
1/2cupshredded Parmesan
1/2cupcreamy Caesar dressingor to taste
Instructions
Bring a large pot of salted water to a boil and cook the cheese tortellini according to package instructions until al dente; drain and rinse under cold water to stop cooking and cool.
While the tortellini cooks, cut the broccoli crowns into small florets and finely chop the onion.
Seed the tomato and dice it into small pieces.
Place the cooled tortellini in a large bowl, add the broccoli, onion, and diced tomato, and sprinkle the shredded Parmesan over the top.
Toss everything together and add creamy Caesar dressing to taste until evenly coated.
Adjust seasoning if desired and serve chilled or at room temperature.
