Tortellini Salad Recipe

A quick and creamy tortellini salad with broccoli, tomato, onion, and Parmesan tossed in Caesar dressing.

Ingredients

  • 18 oz cheese tortellini
  • 2 small broccoli crowns chopped into mini florets
  • 1/2 medium onion finely chopped
  • 1 tomato seeded and diced
  • 1/2 cup shredded Parmesan
  • 1/2 cup creamy Caesar dressing or to taste

Instructions

  • Bring a large pot of salted water to a boil and cook the cheese tortellini according to package instructions until al dente; drain and rinse under cold water to stop cooking and cool.
  • While the tortellini cooks, cut the broccoli crowns into small florets and finely chop the onion.
  • Seed the tomato and dice it into small pieces.
  • Place the cooled tortellini in a large bowl, add the broccoli, onion, and diced tomato, and sprinkle the shredded Parmesan over the top.
  • Toss everything together and add creamy Caesar dressing to taste until evenly coated.
  • Adjust seasoning if desired and serve chilled or at room temperature.

Notes
