Ingredients

  • 12 ounces broccoli florets
  • 1 tablespoon extra-virgin olive oil
  • sea salt to taste
  • freshly ground black pepper to taste
  • red pepper flakes optional, for a hint of heat

Instructions

  • Preheat your oven to 425°F (220°C). A hot oven is key to achieving that delightful crispy texture.
  • Wash the broccoli florets under cold water and pat them dry with a clean towel. It’s important to remove excess moisture to ensure they roast instead of steam.
  • In a mixing bowl, combine the broccoli florets with 1 tablespoon of extra-virgin olive oil, sea salt, freshly ground black pepper, and red pepper flakes if you’re using them. Toss until the florets are evenly coated.
  • Spread the seasoned broccoli in a single layer on a baking sheet. Make sure there’s space between the florets for optimal roasting.
  • Place the baking sheet in the preheated oven and roast for about 15-20 minutes, or until the edges are crispy and the florets are tender. Halfway through the cooking time, use a spatula to flip the broccoli for even browning.
  • Once the broccoli is perfectly roasted, remove it from the oven and let it cool slightly before serving. Enjoy as a side dish or toss it into your favorite grain bowl!

Equipment

  • Baking Sheet
  • Parchment Paper
  • Mixing Bowl
  • Oven mitts
  • Spatula

Notes

  • Use fresh broccoli that is bright green and firm for the best results; thaw and dry frozen broccoli if using.
  • Add a squeeze of fresh lemon juice or sprinkle nutritional yeast after roasting for extra flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in oven or skillet to retain crispiness.
