Ingredients

  • 2 cups rotisserie chicken diced
  • 1/2 cup pecans coarsely chopped
  • 1/3 cup dried cranberries
  • 2 stalks celery thinly sliced (about 1/2 cup)
  • 1/4 cup mayonnaise Hellmann’s/Best Foods
  • 2 tablespoons sour cream light works well
  • 1 tablespoon honey
  • 1 1/2 teaspoons Dijon-style mustard
  • 1 1/2 teaspoons poppy seeds optional
  • 1 teaspoon lemon juice
  • salt and pepper to taste
  • croissants or sandwich rolls for serving
  • thinly sliced apples for serving
  • celery for serving
  • crackers like Wheat Thins for serving

Instructions

  • Start by shredding or dicing your rotisserie chicken into bite-sized pieces. The beauty of using pre-cooked chicken is that it’s already full of flavor and saves you plenty of time!
  • Thinly slice your celery and coarsely chop the pecans. You want these pieces to be small enough to mix well but still provide a satisfying crunch.
  • In a large mixing bowl, combine the mayonnaise, sour cream, honey, Dijon mustard, lemon juice, salt, and pepper. Stir until smooth and well combined. This creamy mixture will be the heart of your chicken salad.
  • Add the diced chicken, chopped pecans, dried cranberries, and sliced celery to the mixing bowl. Gently fold the ingredients into the creamy base, ensuring everything is evenly coated.
  • If you’re using poppy seeds, sprinkle them in now. Fold them gently into the mixture for that extra touch of flavor and visual appeal.
  • Give your chicken salad a taste. If it needs more seasoning, feel free to add additional salt and pepper to your liking. Remember, the flavors develop as it chills, so don’t worry if it feels a bit under seasoned right now.
  • Cover the bowl and refrigerate your chicken salad for at least 30 minutes. This rest time allows the flavors to meld beautifully.
  • Serve your chicken salad on croissants, in sandwich rolls, or with crackers. Pair it with thinly sliced apples or celery for a refreshing crunch. Enjoy this delightful dish any way you like!
