Ingredients

  • 8 oz soba noodles
  • 1 lb flank steak sliced thinly against the grain
  • 1/4 cup soy sauce low-sodium recommended
  • 1/4 cup honey
  • 2 tbsp rice vinegar
  • garlic minced cloves
  • fresh ginger minced or grated
  • 2 tbsp vegetable oil divided
  • 1 red bell pepper thinly sliced
  • 1 cup broccoli florets
  • 1 carrot julienned
  • 2 green onions sliced, for garnish
  • sesame seeds toasted, for garnish

Instructions

  • In a small bowl, whisk together 1/4 cup soy sauce, 1/4 cup honey, 2 tablespoons rice vinegar, minced garlic, and minced ginger until well combined. Set aside.
  • Bring a large pot of water to a boil. Add soba noodles and cook for 4-5 minutes according to package instructions. Drain and rinse under cold water. Set aside.
  • Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the sliced flank steak in a single layer and cook about 2 minutes per side until browned and just cooked through. Remove steak and set aside.
  • Add remaining 1 tablespoon vegetable oil to the skillet. Stir-fry sliced red bell pepper, broccoli florets, and julienned carrot for 3-4 minutes until tender-crisp.
  • Return steak to skillet with vegetables. Pour teriyaki sauce over and toss to coat evenly. Cook 1-2 minutes until sauce thickens and glazes ingredients.
  • Divide soba noodles into bowls. Top with teriyaki steak and vegetable mixture. Garnish with sliced green onions and toasted sesame seeds.
