  • ¼ cup water
  • 2 tablespoons honey
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • ½ teaspoon toasted sesame oil
  • 2 teaspoons fresh ginger, peeled and grated
  • 2 teaspoons fresh garlic, peeled and minced
  • 2 teaspoons cornstarch
  • 1 pound boneless, skinless chicken breast, cut into thin strips
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas, etc.)
  • 2 tablespoons vegetable oil (for stir-frying)
  • Sesame seeds and sliced green onions for garnish (optional)

Instructions

  • Step 1: In a medium bowl, whisk together the low-sodium soy sauce, water, honey, brown sugar, rice vinegar, toasted sesame oil, grated ginger, minced garlic, and cornstarch until well combined.
  • Step 2: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the chicken strips in a single layer. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  • Step 3: In the same skillet, add the remaining tablespoon of vegetable oil. Add your mixed vegetables and stir-fry for about 3-4 minutes, or until they are just tender but still crisp.
  • Step 4: Return the cooked chicken to the skillet and pour the teriyaki sauce over the chicken and vegetables. Toss everything together to coat evenly. Allow the mixture to simmer for another 2-3 minutes, or until the sauce thickens and becomes glossy.
  • Step 5: Remove the skillet from heat. Serve your Teriyaki Chicken Stir Fry over cooked rice or noodles, if desired. Garnish with sesame seeds and sliced green onions for an extra touch of flavor and presentation.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply warm it in a skillet over medium heat or in the microwave until heated through. You may want to add a splash of water to revive the sauce if it has thickened upon cooling.
