Ingredients

  • 1 bunch Swiss chard leaves chopped
  • 1 T olive oil
  • 2 cups cottage cheese
  • 1 1/4 cup grated Mozzarella cheese
  • 1/2 cup crumbled Feta cheese
  • 1/2 cup sliced green onions
  • 12 eggs beaten
  • 1 tsp Spike Seasoning optional but recommended
  • Salt and fresh ground black pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C). This ensures that your Swiss Chard Egg Bake cooks evenly and thoroughly.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped Swiss chard and sauté for about 5 minutes, or until the leaves are wilted and tender. Season with a pinch of salt and pepper. Remove from heat and let it cool slightly.
  • In a large mixing bowl, combine the beaten eggs, cottage cheese, grated mozzarella, crumbled feta, and sliced green onions. Add the sautéed Swiss chard to the mixture, along with the Spike Seasoning, salt, and pepper. Stir until everything is well combined.
  • Pour the egg mixture into a greased 9x13 inch baking dish, spreading it evenly. This ensures that it cooks uniformly.
  • Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the eggs are set. A toothpick inserted into the center should come out clean.
