In a small saucepan, combine 1 cup of water and 1 cup of granulated sugar. Heat over medium heat, stirring until the sugar dissolves completely. Once dissolved, remove from heat.
Sprinkle 1 teaspoon of unflavored gelatin over the warm sugar-water mixture. Let it sit for a minute to soften, then stir until fully dissolved.
In a large mixing bowl, combine 16 ounces of sour cream, 1 cup of heavy cream, and 1 tablespoon of vanilla extract or vanilla paste. Use a whisk to blend the mixture until it’s smooth and creamy.
Gradually pour the dissolved gelatin mixture into the cream mixture, whisking continuously to ensure everything is well combined.
Pour the creamy mixture into individual serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 4 hours, or until it has set properly.
Once the Swedish Cream has set, remove from the refrigerator. Top with fresh berries of your choice and a sprig of fresh mint for an added touch of elegance. Serve chilled and enjoy the delightful flavors!
