Ingredients

  • 1 cup water
  • 1 cup granulated sugar
  • 1 teaspoon unflavored gelatin 1 packet
  • 16 ounces sour cream
  • 1 cup heavy cream
  • 1 tablespoon vanilla extract or vanilla paste
  • fresh berries for garnish (strawberries, blueberries, raspberries, or blackberries)
  • fresh mint for garnish (optional)

Instructions

  • In a small saucepan, combine 1 cup of water and 1 cup of granulated sugar. Heat over medium heat, stirring until the sugar dissolves completely. Once dissolved, remove from heat.
  • Sprinkle 1 teaspoon of unflavored gelatin over the warm sugar-water mixture. Let it sit for a minute to soften, then stir until fully dissolved.
  • In a large mixing bowl, combine 16 ounces of sour cream, 1 cup of heavy cream, and 1 tablespoon of vanilla extract or vanilla paste. Use a whisk to blend the mixture until it’s smooth and creamy.
  • Gradually pour the dissolved gelatin mixture into the cream mixture, whisking continuously to ensure everything is well combined.
  • Pour the creamy mixture into individual serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 4 hours, or until it has set properly.
  • Once the Swedish Cream has set, remove from the refrigerator. Top with fresh berries of your choice and a sprig of fresh mint for an added touch of elegance. Serve chilled and enjoy the delightful flavors!
