224 oz jarsstore-bought marinara or homemade
14.5ozcanned tomatoes
20oztortellini (fresh or frozen)
3ozsliced pepperoni
2ozsliced olives
1green bell peppersliced
0.5mediumred onionthinly sliced
16ozmozzarella cheeseshredded
Instructions
In a large skillet over medium heat, add the chorizo. Break it up with a wooden spoon, cooking until browned and fully cooked, about 5-7 minutes. Remove excess grease if necessary.
Add the sliced green bell pepper and red onion to the skillet with the chorizo. Sauté for about 3-4 minutes until the vegetables are tender and fragrant.
Stir in the canned tomatoes and marinara sauce. Mix well and let the sauce simmer for about 5 minutes to meld the flavors.
While the sauce is simmering, cook the tortellini according to the package instructions. Drain and set aside.
In the large baking dish, combine the cooked tortellini with the chorizo and sauce mixture. Add the sliced pepperoni and olives, stirring until well coated.
Sprinkle the shredded mozzarella cheese evenly over the top of the tortellini mixture.
Preheat your oven to 375°F (190°C). Bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.
