Ingredients

  • 1 lb chorizo
  • 2 24 oz jars store-bought marinara or homemade
  • 14.5 oz canned tomatoes
  • 20 oz tortellini (fresh or frozen)
  • 3 oz sliced pepperoni
  • 2 oz sliced olives
  • 1 green bell pepper sliced
  • 0.5 medium red onion thinly sliced
  • 16 oz mozzarella cheese shredded

Instructions

  • In a large skillet over medium heat, add the chorizo. Break it up with a wooden spoon, cooking until browned and fully cooked, about 5-7 minutes. Remove excess grease if necessary.
  • Add the sliced green bell pepper and red onion to the skillet with the chorizo. Sauté for about 3-4 minutes until the vegetables are tender and fragrant.
  • Stir in the canned tomatoes and marinara sauce. Mix well and let the sauce simmer for about 5 minutes to meld the flavors.
  • While the sauce is simmering, cook the tortellini according to the package instructions. Drain and set aside.
  • In the large baking dish, combine the cooked tortellini with the chorizo and sauce mixture. Add the sliced pepperoni and olives, stirring until well coated.
  • Sprinkle the shredded mozzarella cheese evenly over the top of the tortellini mixture.
  • Preheat your oven to 375°F (190°C). Bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.
