Ingredients

  • 1 tablespoon olive oil
  • 1 clove garlic crushed
  • 1 small onion sliced
  • 1 tablespoon tomato paste
  • 28 ounces canned tomatoes chopped and peeled
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon sugar
  • 1/2 cup basil chopped

Sugo Recipe: How It’s Done

  • In a large saucepan, heat 1 tablespoon of olive oil over medium heat. Once hot, add the sliced onion and sauté until translucent, about 4-5 minutes. Then, add the crushed garlic and cook for an additional 1-2 minutes until fragrant.
  • Stir in 1 tablespoon of tomato paste, mixing well with the onions and garlic. Allow it to cook for about 1 minute to deepen the flavor.
  • Pour in the 28 ounces of canned chopped and peeled tomatoes. Stir to combine with the sautéed mixture.
  • Add in 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 1 teaspoon of sugar. Stir well to incorporate all the ingredients.
  • Bring the mixture to a gentle simmer. Reduce the heat to low and let it cook uncovered for about 20-30 minutes, stirring occasionally to meld the flavors beautifully.
  • Once the sauce has thickened to your desired consistency, remove it from the heat and stir in 1/2 cup of chopped fresh basil for a vibrant touch and fresh aroma.

Notes
