  • 2 teaspoons Kosher Salt or Sea Salt for seasoning
  • 1 tablespoon Olive Oil extra virgin
  • 1-2 tablespoons Butter for basting
  • Fresh Herbs rosemary or thyme, optional for basting

Instructions

Steak Preparation and Cooking

  • Take the choice steak out of the refrigerator and allow it to come to room temperature for about 30 minutes to ensure even cooking.
  • Sprinkle 2 teaspoons of kosher salt or sea salt evenly on both sides of the steak. Let it sit for another 15-20 minutes to allow the salt to penetrate the meat.
  • Place a cast iron skillet on medium-high heat and let it get hot, ready for searing.
  • Add 1 tablespoon of extra virgin olive oil to the hot skillet and swirl to coat evenly.
  • Carefully place the steak in the skillet and sear each side for about 4-5 minutes without moving it to develop a beautiful crust.
  • Use a meat thermometer to check the internal temperature: 130°F (54°C) for medium-rare or 140°F (60°C) for medium. Flip and continue cooking as needed.
  • In the last minute of cooking, add 1-2 tablespoons of butter and fresh herbs to the skillet. Baste the melted butter over the steak with a spoon for added richness.
  • Remove the steak from the skillet and transfer to a cutting board. Let it rest for 5-10 minutes to allow juices to redistribute.
  • Slice the steak against the grain and serve with your favorite sides.
