Ingredients

  • 6 flounder fillets about 4-6 ounces each, boneless & skinless
  • 1 tsp Old Bay Seasoning or to taste
  • 1 tbsp olive oil
  • 3 oz cream cheese softened
  • ½ cup mozzarella cheese shredded
  • ½ cup feta cheese crumbled
  • 3 oz baby spinach roughly chopped

Instructions

  • Preheat your oven to 375°F (190°C) to ensure even cooking.
  • In a mixing bowl, combine the softened cream cheese, shredded mozzarella, crumbled feta, and chopped spinach. Season with a pinch of Old Bay seasoning and mix until creamy.
  • Drizzle olive oil over the flounder fillets and sprinkle with the remaining Old Bay seasoning, coating evenly.
  • Spoon a generous amount of the spinach filling onto one end of each fillet, then gently roll the fillet over the filling. Secure with toothpicks if needed.
  • Arrange the stuffed fillets seam-side down in a greased baking dish, making sure not to overcrowd.
  • Bake in the preheated oven for 20-25 minutes, until the fish flakes easily and the filling is hot and bubbly.
  • Remove from oven and let cool for a few minutes before serving. Enjoy with rice or a green salad.
