Ingredients

  • 1 16 ounce container egg whites a great source of protein
  • 2 large eggs for added richness and flavor
  • 2 1/2 cups cheese Colby or Sharp Cheddar, shredded for meltiness
  • 10 ounces fresh spinach packed with nutrients and a lovely color
  • 1 tablespoon butter for sautéing the spinach
  • 1 teaspoon Italian seasoning adds a lovely herby flavor
  • 1/2 teaspoon garlic powder for that aromatic touch
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 350°F (175°C). This ensures that your egg bake will cook evenly.
  • In a skillet, melt the butter over medium heat. Add the fresh spinach and sauté for about 2-3 minutes until it wilts down.
  • In a mixing bowl, combine the egg whites and large eggs. Whisk them together until well blended. Add the Italian seasoning, garlic powder, salt, and pepper to the eggs, mixing until fully incorporated.
  • Stir in the sautéed spinach and shredded cheese into the egg mixture. Make sure everything is evenly distributed.
  • Transfer the egg and spinach mixture into a greased 9x13 inch baking dish. Spread it out evenly with a spatula.
  • Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the eggs are set and the top is lightly golden.
  • Once baked, remove the dish from the oven and let it cool for a few minutes. Cut into squares and serve warm.
