Ingredients

  • 8 oz udon noodles
  • 1 lb chicken breast sliced into thin strips
  • 2 tablespoons sesame oil
  • 2 cloves garlic minced
  • 1 inch fresh ginger grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon honey
  • 1/2 cup bell peppers sliced (red or yellow for sweetness)
  • 1/2 cup snap peas trimmed
  • 2 green onions chopped
  • 1 tablespoon sesame seeds
  • salt and pepper to taste

Instructions

  • Bring a large pot of salted water to a boil. Add the udon noodles and cook according to package instructions, usually around 8-10 minutes until tender but chewy. Drain the noodles and set aside.
  • Heat 1 tablespoon of sesame oil in your skillet or wok over medium-high heat. Add the minced garlic and grated ginger, stirring quickly to release their aroma—about 30 seconds to 1 minute.
  • Add the sliced chicken breast, seasoning lightly with salt and pepper. Cook for 5-7 minutes until the chicken is browned and cooked through.
  • Toss in the sliced bell peppers and snap peas. Stir-fry for another 3-4 minutes until the vegetables are crisp-tender but still vibrant.
  • In a small bowl, whisk together soy sauce, sriracha sauce, honey, and the remaining tablespoon of sesame oil. Pour this sauce over the chicken and vegetables in the skillet. Stir well to coat everything evenly and let it simmer for 2 minutes so the flavors meld.
  • Add the cooked udon noodles to the skillet. Toss everything together gently but thoroughly to ensure the noodles are coated in the spicy sesame sauce. Remove from heat, sprinkle with chopped green onions and sesame seeds.
  • Divide the Spicy Sesame Chicken Udon into bowls and serve hot. Enjoy!
