Ingredients

  • 8 chicken drumsticks
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper

  • 4 ears corn husked
  • 1 tablespoon butter melted
  • chopped parsley for garnish

Instructions

Step 1: Prep the Marinade

  • In a medium mixing bowl, whisk together 1/4 cup honey, 1/4 cup Dijon mustard, 2 tablespoons olive oil, 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon cayenne pepper, and salt and pepper to taste to make the spicy honey mustard sauce.

Step 2: Coat the Drumsticks

  • Pat the chicken drumsticks dry with paper towels. Add them to the bowl and toss until fully coated in the marinade. Let marinate for at least 15 minutes at room temperature.

Step 3: Prepare the Corn

  • While the chicken marinates, husk the corn and remove all silk. Brush each ear with melted butter, season with salt, and set aside.

Step 4: Bake the Chicken

  • Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment paper. Arrange drumsticks in a single layer and bake for 35-40 minutes, turning halfway, until cooked through and skin is crispy.

Step 5: Cook the Corn

  • During the last 15 minutes of baking, place buttered corn on a separate tray in the oven or grill directly. Cook until tender and slightly charred, about 10-15 minutes, turning occasionally.

Step 6: Garnish & Serve

  • Transfer the drumsticks and corn to a serving platter. Sprinkle chopped parsley over the corn. Serve hot with leftover honey mustard sauce for dipping.
