Ingredients

  • 2 tablespoons vegetable oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 boneless, skinless chicken breasts sliced into bite-sized pieces
  • salt to taste
  • black pepper to taste
  • 4 cups chicken broth low-sodium preferred
  • 2 tablespoons soy sauce naturally brewed
  • 1 tablespoon chili paste adjust to taste
  • 4 ounces ramen noodles fresh or dried, no seasoning packets
  • 1 cup baby spinach
  • 2 tablespoons green onions sliced thinly
  • 1 tablespoon sesame oil for drizzling
  • 2 boiled eggs optional, soft boiled

Instructions

Step 1: Prepare the Chicken and Aromatics

  • Begin by heating 2 tablespoons of vegetable oil in your large pot over medium heat. Once shimmering, add the minced garlic and grated ginger. Sauté for about 1-2 minutes until fragrant, stirring constantly to prevent burning.

Step 2: Cook the Chicken

  • Slice the chicken breasts into bite-sized pieces, season lightly with salt and pepper, and add them to the pot. Cook until the chicken turns opaque and starts to brown slightly, about 5-7 minutes. Stir occasionally to ensure even cooking.

Step 3: Build the Broth

  • Pour in 4 cups of chicken broth, followed by 2 tablespoons of soy sauce and 1 tablespoon of chili paste. Stir everything together and bring to a simmer. Let it cook gently for about 10 minutes, allowing the flavors to meld beautifully.

Step 4: Cook the Noodles

  • In a separate pot, cook the ramen noodles according to package instructions, usually 3-4 minutes. Avoid using the seasoning packets. Drain and rinse briefly under cold water to stop cooking, then set aside.

Step 5: Add Greens and Finish

  • Stir in the baby spinach and sliced green onions, letting the spinach wilt slightly in the hot broth. Drizzle 1 tablespoon of sesame oil for that final flavor boost. Taste and adjust salt and pepper as needed.

Step 6: Assemble and Serve

  • Divide the cooked noodles between bowls and ladle the piping hot broth and chicken over them. Top with optional boiled eggs for added richness. Serve immediately and enjoy the comforting warmth of your homemade Spicy Garlic Chicken Ramen.
