Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 teaspoons baking powder
  • 2 cups sharp cheddar cheese shredded
  • 12-16 ounces soy chorizo
  • 3 tablespoons unsalted butter melted and cooled
  • 1/2 cup plain Greek yogurt
  • 2-3 teaspoons sauce from can of chipotle chiles to taste
  • 1/4 cup cilantro chopped

Instructions

Stepwise Method: Soy Chorizo Cheddar Balls

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a large mixing bowl, whisk together the all-purpose flour, salt, ground pepper, cayenne pepper, and baking powder until well combined.
  • Add the shredded sharp cheddar cheese and soy chorizo to the dry mixture. Use your hands or a spatula to mix until evenly distributed.
  • In a separate bowl, combine the melted butter, Greek yogurt, and chipotle sauce. Mix until smooth, then pour this mixture into the dry ingredients. Stir everything together until a dough forms.
  • Using a cookie scoop or your hands, portion out the dough into small balls, about 1-2 inches in diameter. Place them on the prepared baking sheet, leaving space between each ball.
  • Bake in the preheated oven for 20-25 minutes or until the balls are golden brown and firm to the touch.
  • Once baked, remove the cheddar balls from the oven and let them cool slightly. Sprinkle with chopped cilantro for a fresh touch before serving.
