Ingredients

  • 2 tablespoons butter
  • 1/2 large onion diced
  • 1 large green bell pepper diced
  • 1 large red bell pepper diced
  • 12 large eggs
  • 1.5 cups grated cheddar cheese
  • Salt to taste
  • Pepper to taste
  • 3 cups frozen tater tots
  • Chopped cilantro for garnish
  • Salsa
  • Sour cream
  • Extra toppings optional

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, melt the butter over medium heat. Add the diced onion, green bell pepper, and red bell pepper. Sauté for about 5-7 minutes, or until softened.
  • In a mixing bowl, crack the eggs and whisk until well combined. Add salt and pepper to taste.
  • Once the vegetables are ready, add them to the bowl with the whisked eggs. Stir in the grated cheddar cheese and frozen tater tots.
  • Pour the mixture into a greased baking dish, spreading it out evenly.
  • Bake for 30-35 minutes, or until the eggs are set and the top is golden brown.
  • Remove from the oven, let cool for a few minutes, and garnish with chopped cilantro. Serve with salsa, sour cream, or extra toppings.
