Preheat your oven to 375°F (190°C).
In a large skillet, melt the butter over medium heat. Add the diced onion, green bell pepper, and red bell pepper. Sauté for about 5-7 minutes, or until softened.
In a mixing bowl, crack the eggs and whisk until well combined. Add salt and pepper to taste.
Once the vegetables are ready, add them to the bowl with the whisked eggs. Stir in the grated cheddar cheese and frozen tater tots.
Pour the mixture into a greased baking dish, spreading it out evenly.
Bake for 30-35 minutes, or until the eggs are set and the top is golden brown.
Remove from the oven, let cool for a few minutes, and garnish with chopped cilantro. Serve with salsa, sour cream, or extra toppings.
