Ingredients

  • 1 can chickpeas 19 fluid ounce, drained
  • 1 tablespoon olive oil
  • salt to taste
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon ground coriander
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon dried oregano optional
  • 0.125 teaspoon chili powder
  • 0.125 teaspoon chipotle chili pepper

Instructions

  • Preheat your oven to 400°F (200°C). This high temperature will help the chickpeas attain that perfect crunch.
  • Open the can of chickpeas and drain them well. Rinse under cold water to remove any excess sodium and pat them dry with a clean kitchen towel.
  • In a mixing bowl, combine olive oil, salt, smoked paprika, ground cumin, garlic powder, onion powder, ground coriander, black pepper, oregano (if using), chili powder, and chipotle chili pepper. Stir until all the spices are well incorporated.
  • Add the dried chickpeas to the bowl with the spice mixture. Toss until every chickpea is evenly coated with the oil and spices.
  • Transfer the chickpeas to a baking sheet lined with parchment paper. Spread them out in a single layer to ensure even roasting.
  • Place the baking sheet in the preheated oven and roast for 25-30 minutes. Stir the chickpeas halfway through the cooking time to promote even browning. Keep an eye on them in the last few minutes to prevent burning.
  • Once the chickpeas are golden brown and crispy, remove them from the oven and let them cool for a few minutes. They will continue to crisp up as they cool. Enjoy them as a snack on their own or toss them into salads or grain bowls.
