Ingredients

  • 1/2 cup black beans rinsed and drained
  • 1/2 cup corn kernels drained
  • 1/2 cup tomato diced
  • 1/4 cup red onion finely chopped
  • 2 tbsp cilantro chopped
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 4 tortillas your choice of size
  • 1 cup rotisserie chicken shredded
  • 8 tbsp red pepper hummus for spreading
  • 1 cup Romaine lettuce shredded

Instructions

Step 1: Prepare the Ingredients

  • Begin by gathering all your ingredients. Rinse and drain the black beans and corn. Dice the tomato, chop the red onion, and finely chop the cilantro. Set everything aside for easy access.

Step 2: Make the Bean and Veggie Mixture

  • In a mixing bowl, combine the black beans, corn, diced tomato, red onion, cilantro, salt, and black pepper. Stir gently until all ingredients are well mixed. This mixture forms the flavorful base of your wrap.

Step 3: Assemble the Wraps

  • Lay a tortilla flat on your cutting board. Spread 2 tablespoons of red pepper hummus evenly across the center of the tortilla.

Step 4: Add Chicken and Veggie Mixture

  • Next, sprinkle a generous amount of shredded rotisserie chicken over the hummus. Follow with a scoop of the bean and veggie mixture. Finally, add a handful of shredded Romaine lettuce on top for an extra crunch.

Step 5: Roll the Wrap

  • To roll your wrap, start at one edge and fold the sides inward, then roll tightly away from you. Ensure the filling is secure within the tortilla. Repeat this process for the remaining tortillas.

Step 6: Serve and Enjoy

  • Cut each wrap in half for easier handling and serve immediately. These wraps are delicious on their own or can be served with a side of your favorite salsa for dipping. Enjoy the burst of flavors in every bite!

Notes

  • For a vegan option, omit the chicken and add extra veggies or plant-based protein like tofu or chickpeas.
  • Use different hummus flavors such as garlic or classic to vary the taste.
  • Store leftover filling separately and assemble wraps fresh to avoid sogginess.
