  • ½ cup unsalted butter at room temperature
  • ½ cup light brown sugar lightly packed
  • ¼ cup granulated sugar
  • 1 large egg at room temperature
  • cup creamy peanut butter not natural-style
  • 1 teaspoon pure vanilla extract
  • 1 and ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ cup old-fashioned whole rolled oats
  • ½ cup M&Ms
  • ½ cup semi-sweet chocolate chips optional

Instructions

  • Step 1: Preheat your oven to 350°F (175°C).
  • Step 2: In a large mixing bowl, cream together the unsalted butter, light brown sugar, and granulated sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  • Step 3: Add the egg, creamy peanut butter, and vanilla extract to the butter-sugar mixture. Beat well until fully combined.
  • Step 4: In a separate bowl, whisk together the all-purpose flour, baking soda, and rolled oats. Gradually add this dry mixture to the wet ingredients, mixing on low speed until just combined.
  • Step 5: Gently fold in the M&Ms and semi-sweet chocolate chips (if using) with a spatula or wooden spoon.
  • Step 6: Using a cookie scoop or a tablespoon, drop rounded balls of dough onto a parchment-lined baking sheet, leaving enough space between each cookie.
  • Step 7: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
