Ingredients

  • 2 medium zucchinis cut into fries
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1 clove garlic minced

Instructions

  • Start by washing and drying your zucchinis thoroughly. Cut them into evenly sized fries—about 3 to 4 inches long and roughly 1/2 inch thick to ensure even cooking and perfect crispiness.
  • In a large mixing bowl, toss the zucchini fries with olive oil to coat lightly but thoroughly. Sprinkle smoked paprika, garlic powder, salt, and pepper over the fries and toss again to season evenly.
  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil. Arrange the zucchini fries in a single layer without overlapping. Bake for 20-25 minutes, flipping halfway through, until golden and crisp on the edges.
  • While the fries bake, prepare the lime aioli by combining mayonnaise, lime juice, lime zest, and minced garlic in a small bowl. Stir well until smooth and creamy. Adjust lime or garlic to taste.
  • Remove fries from the oven and let cool slightly. Serve warm with a generous dollop of lime aioli for dipping. Enjoy as a snack or side dish.

Equipment

  • Large Mixing Bowl
  • Baking Sheet
  • Parchment Paper
  • Small Bowl

Notes

  • Pat zucchini fries dry with a paper towel before seasoning to remove excess moisture for extra crispiness.
  • Spread fries out on the baking sheet to avoid overcrowding and ensure even crisping.
  • Use smoked paprika for authentic smoky flavor; regular paprika is a milder substitute.
  • Roast garlic before mincing for a deeper garlic flavor in the aioli.
  • Store leftovers in an airtight container in the refrigerator and reheat in the oven to maintain crispiness; avoid microwaving.
