Ingredients

  • 4 tablespoons low fat or fat free cream cheese
  • 1 tablespoon fresh dill finely chopped
  • 1 clove garlic crushed
  • 1 base wholemeal or wholewheat store-bought pizza base prepared, or a flour tortilla
  • 1 tablespoon garlic olive oil drizzle
  • 0.5 large red onion finely sliced
  • 0.5 cup light or reduced fat grated mozzarella cheese
  • 3.5 oz smoked salmon
  • 0.5 large avocado sliced thinly
  • 1 handful fresh baby rocket (arugula)
  • 1 teaspoon lemon pepper seasoning
  • 0.5 cup extra light or reduced fat grated mozzarella cheese

Instructions

  • In a small bowl, combine the low fat cream cheese with finely chopped fresh dill and the crushed garlic clove. Mix thoroughly until smooth and well blended.
  • Place your wholemeal pizza base or flour tortilla on a baking tray lined with parchment paper. Lightly drizzle the garlic olive oil over the base.
  • Spread the cream cheese mixture evenly over the base, leaving about a half-inch border around the edges.
  • Scatter the finely sliced red onions evenly over the cream cheese layer, then sprinkle half a cup of light mozzarella cheese on top.
  • Place the pizza in a preheated oven at 200°C (about 400°F) for 8-10 minutes, or until the cheese is melted and the base is crispy around the edges.
  • Once the pizza is out of the oven, arrange the smoked salmon slices evenly over the melted cheese. Then layer the thinly sliced avocado on top.
  • Sprinkle the remaining half cup of light mozzarella cheese over the salmon and avocado, then add a generous handful of fresh baby rocket (arugula). Season with lemon pepper.
  • Slice and serve your Smoked Salmon and Avocado Pizza immediately for best flavor and freshness.
