Ingredients

  • 1.5 pounds ground beef 80/20 fat ratio for the juiciest flavor

  • 1 teaspoon black pepper
  • 6 (6-inch) small flour tortillas
  • 6 slices American cheese or your favorite cheese

  • minced onion
  • dill pickles sliced or whole, your choice
  • burger sauce homemade or store-bought

Instructions

  • Start by placing the ground beef in a mixing bowl. Add the salt and black pepper, mixing gently with your hands. Avoid overworking the meat to keep it tender.
  • Place a large skillet over medium-high heat. Allow it to get hot, as this is crucial for achieving that beautiful sear on your beef.
  • Once the skillet is hot, take a handful of the seasoned beef and form it into a ball. Place it in the skillet and use your spatula to smash it flat. Cook for about 2-3 minutes on one side until it develops a golden-brown crust.
  • Flip the smashed beef patty and immediately place a slice of American cheese on top. Allow it to melt for about 1-2 minutes while the other side cooks.
  • While the beef patties are cooking, you can warm the tortillas. You can do this in a dry skillet on low heat for about 30 seconds on each side until they are pliable.
  • Once the beef is cooked and cheese melted, it’s time to assemble your tacos. Place a cheesy beef patty in the center of each tortilla. Top with shredded lettuce, minced onion, and dill pickles.
