Ingredients

  • 6 cups cubed red potatoes about 2 pounds or 6 medium potatoes
  • 0.5 cup milk whole milk or any milk alternative
  • 4 ounces softened cream cheese
  • 1 cup sour cream
  • 0.5 cup softened unsalted butter
  • 1 envelope ranch salad dressing powder 1-ounce envelope
  • 1 teaspoon dried dill or parsley optional garnish

Instructions

Step 1: Prep the Potatoes

  • Start by washing and peeling the red potatoes if you prefer a smoother mash, or leave the skins on for extra texture and nutrients. Cut the potatoes into evenly sized cubes, about 1-inch pieces, to ensure even cooking in the slow cooker.

Step 2: Slow Cook the Potatoes

  • Place the cubed potatoes in your slow cooker and add just enough water to cover the bottom (about 1/2 cup of water). Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours. The potatoes should be fork-tender when done.

Step 3: Drain and Mash

  • Once the potatoes are cooked, carefully drain any excess water. Transfer the potatoes to a large mixing bowl or leave them in the slow cooker if it’s large enough. Begin mashing with a potato masher or use an electric mixer for extra creaminess.

Step 4: Mix in the Creamy Ingredients

  • In a separate bowl, combine the softened cream cheese, sour cream, softened butter, milk, and ranch dressing powder. Mix thoroughly until smooth. Pour this mixture over the mashed potatoes and continue mashing or mixing until well combined and creamy.

Step 5: Garnish and Serve

  • Sprinkle the top with dried dill or parsley for a fresh, colorful garnish. Serve warm and enjoy the rich, tangy flavor that elevates these mashed potatoes beyond the ordinary.

Equipment

  • Slow Cooker
  • Potato masher or electric mixer
  • Measuring Cups and Spoons
  • Mixing Bowl
  • Serving spoon

Notes

  • Ensure cream cheese and butter are softened to room temperature for smooth blending without lumps.
  • Add milk gradually if you prefer thinner mashed potatoes for desired creaminess.
  • Leftover mashed potatoes can be repurposed into croquettes or added to casseroles to reduce waste.
