Ingredients

  • 1 stick unsalted butter melted
  • 3 egg yolks room temperature
  • 3 teaspoons salt
  • a pinch pepper cayenne, white, or black
  • 4 teaspoons lemon juice fresh

Instructions

  • In a small saucepan, melt the stick of unsalted butter over low heat. Make sure it’s fully melted but not browned.
  • In a mixing bowl or blender, combine the 3 room temperature egg yolks, 3 teaspoons of salt, a pinch of your chosen pepper, and 4 teaspoons of lemon juice. If using a blender, blend for about 30 seconds until the mixture is pale and frothy.
  • With the blender running (or while whisking vigorously), slowly drizzle in the melted butter. Continue blending or whisking until the sauce thickens and is creamy. Taste and adjust seasoning if necessary.
