Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 pound green beans trimmed
  • 1 lemon sliced into thin rounds
  • 1 teaspoon dried thyme

Instructions

  • Preheat your oven to 400°F (200°C). Rinse the cod fillets gently and pat them dry with paper towels. Trim the ends off the green beans and set aside.
  • In a small mixing bowl, whisk together olive oil, freshly squeezed lemon juice, minced garlic, salt, black pepper, and dried thyme to make the lemon garlic marinade.
  • Add the trimmed green beans to the marinade bowl and toss until evenly coated. Spread the green beans on the sheet pan in a single layer.
  • Place the cod fillets on the sheet pan nestled among the green beans. Spoon any remaining marinade over the fish. Lay the lemon slices over and around the cod.
  • Roast in the oven for 12-15 minutes, until the cod flakes easily with a fork and the green beans are tender-crisp. Lemon slices will caramelize slightly.
  • Serve immediately. This dish pairs well with quinoa, rice, or a fresh salad for a complete meal.
