Ingredients

  • 1/2 pound spicy ground sausage
  • 2 everything bagels
  • 5 large eggs
  • 2 tablespoons milk or cream
  • 1 tablespoon butter
  • 1 cup shredded Mexican cheese

Instructions

Step 1: Prepare the Sausage

  • In a skillet over medium heat, add the spicy ground sausage. Cook until browned and fully cooked through, breaking it apart with your spatula as it cooks. This should take about 5-7 minutes. Once done, remove from the heat and set aside.

Step 2: Scramble the Eggs

  • In a mixing bowl, whisk together the eggs and milk until fully combined. In the same skillet, melt the butter over medium-low heat. Pour in the egg mixture, stirring gently with your spatula until the eggs are fluffy and just set. This should take about 3-4 minutes. Remove from heat.

Step 3: Assemble the Bagel Pizzas

  • Preheat your oven to 375°F (190°C). Slice the everything bagels in half and place them on a baking sheet, cut side up. Spoon a generous amount of cooked sausage onto each bagel half, followed by a scoop of scrambled eggs. Finally, top each bagel pizza with shredded Mexican cheese.

Step 4: Bake

  • Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly. For an extra touch, you can broil them for an additional 1-2 minutes to get a golden crust on the cheese.
