Ingredients

  • 2 cups lightly salted or unsalted roasted peanuts
  • 1/4 cup light corn syrup, corn syrup, agave nectar, or rice syrup
  • 2 tablespoons light brown sugar
  • 1/2 teaspoon flaky sea salt, such as fleur de sel or Maldon salt

Instructions

  • Line a rimmed baking sheet with parchment paper to prevent sticking and ease cleanup.
  • In a medium saucepan, combine the light corn syrup (or alternative) and light brown sugar over medium heat. Stir until sugar is dissolved and mixture is smooth.
  • Add the roasted peanuts to the saucepan. Stir continuously to coat the peanuts evenly in the syrup.
  • Cook the peanuts in the syrup over medium heat for about 5 to 7 minutes, stirring often to prevent scorching and sticking.
  • Remove the saucepan from heat as the peanuts turn golden. Immediately sprinkle in the flaky sea salt and stir to distribute evenly.
  • Pour the coated peanuts onto the prepared baking sheet. Spread into a single layer and allow to cool completely at room temperature until crunchy.
