Ingredients

  • 4 slices whole grain bread
  • 4 tablespoons fig jam
  • 1 large tomato sliced
  • 4 slices mozzarella cheese
  • 4 slices turkey bacon cooked until crispy
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • fresh basil leaves for garnish

Instructions

  • Start by cooking your turkey bacon slices in a skillet over medium heat until they turn crispy and golden brown. Once cooked, place them on a paper towel to drain any excess grease.
  • Lay out the four slices of whole grain bread on a clean surface. Spread 1 tablespoon of fig jam evenly over one side of each slice.
  • Arrange the mozzarella slices on two of the bread slices, directly over the fig jam. Layer the tomato slices on top of the cheese. Sprinkle a pinch of salt and pepper on the tomatoes. Then, add the crispy turkey bacon slices over the tomatoes.
  • Place a few fresh basil leaves on top of the turkey bacon. Finally, top with the remaining bread slices, fig jam side down, to complete the sandwiches.
  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Place one sandwich in the skillet and cook until the bread is golden brown and the mozzarella begins to melt, about 3-4 minutes. Flip the sandwich gently, add remaining olive oil if needed, and cook the other side for another 3-4 minutes.
  • Remove the sandwiches from the skillet once both sides are toasted and the cheese is melted. Slice in half diagonally and garnish with extra fresh basil leaves. Serve warm and enjoy!
