  • 1 rotisserie chicken shredded

Instructions

  • Start by removing the skin from your rotisserie chicken and shredding the meat off the bones using your hands or two forks. Aim for bite-sized pieces so they fit nicely in your tortillas.
  • Heat a large skillet over medium heat. Add the shredded chicken, then sprinkle the taco seasoning evenly over it. Pour in the low-sodium chicken broth and stir to combine. Let it simmer for about 5-7 minutes, stirring occasionally, until the chicken absorbs the flavors and the liquid reduces slightly.
  • While the chicken simmers, shred your red cabbage finely and place it in a bowl. Slice the avocado and chop the fresh cilantro. Grate your cheese if needed and prepare lime wedges for serving.
  • Warm your corn tortillas on a dry skillet or directly over a low flame for a few seconds on each side until pliable and slightly toasted. This enhances their flavor and prevents tearing.
