Rotisserie Chicken Salad Sandwich

Ingredients

  • 2 cups chicken, cooked and chopped
  • 1 cup apple, diced (Gala recommended)
  • 1/2 cup raisins
  • 1/4 cup light mayonnaise
  • 1 teaspoon celery seed
  • salt and pepper to taste
  • bread your choice, for serving

Instructions

  • Chop the cooked chicken into bite-sized pieces and dice the apple into small pieces.
  • In a mixing bowl, combine the chopped chicken, diced apple, raisins, light mayonnaise, and celery seed.
  • Season with salt and pepper to taste and stir until the mayonnaise is evenly incorporated.
  • Chill the chicken salad for at least 30 minutes to meld flavors.
  • Serve the chilled chicken salad on your choice of bread with optional lettuce or sprouts.
