Ingredients

  • 1 sheet puff pastry thawed
  • 1 large egg for egg wash
  • 2 ounces cream cheese softened
  • 2 tablespoons Thousand Island dressing
  • 6 slices Swiss cheese
  • 1/2 cup sauerkraut excess liquid squeezed out
  • 6 slices deli-sliced corned beef
  • 1/2 teaspoon caraway seeds optional
  • Thousand Island dressing more for serving

Instructions

  • Preheat your oven to 400°F (200°C). This ensures that your pinwheels will bake evenly and develop that perfect golden-brown color.
  • On a lightly floured surface, roll out the thawed puff pastry sheet if necessary to ensure it’s an even thickness. Aim for about 1/8 inch thick.
  • In a mixing bowl, combine the softened cream cheese and Thousand Island dressing until smooth and well blended. This creamy mixture will serve as the base for your filling.
  • Spread the cream cheese mixture evenly over the puff pastry, leaving a small border around the edges. Layer the Swiss cheese slices over the cream cheese, followed by the sauerkraut, and then the slices of corned beef. If you’re using caraway seeds, sprinkle them over the top for added flavor.
  • Starting from one edge, carefully roll the puff pastry tightly into a log. Make sure to keep the filling inside as you roll.
  • Once rolled, use a sharp knife or pizza cutter to slice the log into 1-inch thick pinwheels. Arrange them on a baking sheet lined with parchment paper, leaving some space between each one.
  • In a small bowl, whisk the egg. Using a pastry brush, apply a thin layer of the egg wash over the tops of each pinwheel to ensure a beautiful golden crust when baked.
  • Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the pinwheels are puffed and golden brown. Keep an eye on them to avoid over-browning.
  • Remove the pinwheels from the oven and let them cool slightly before serving. Serve with extra Thousand Island dressing on the side for dipping. Enjoy the delightful combination of flavors and textures!

  • Be sure to squeeze out excess liquid from the sauerkraut to keep pinwheels crisp.
  • Try substituting Gouda or cheddar cheese for a different flavor twist.
  • Prepare pinwheels ahead of time and refrigerate or freeze for convenience.
  • Freeze unbaked pinwheels on a baking sheet before transferring to a freezer bag to prevent sticking.
