Ingredients

  • 300 g red lentils
  • 60 ml water
  • 2 tsp smoked paprika
  • 120 g cornmeal
  • 2 tsp cornstarch
  • 150 g mozzarella diced
  • 50 g sesame seeds
  • Salt to taste
  • Pepper to taste

Instructions

Cook the Lentils

  • Rinse the red lentils under cold water until the water runs clear. In a medium saucepan, combine the lentils with 60 ml of water. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the lentils are tender and water is absorbed.

Prepare the Mixture

  • Remove the lentils from heat and let them cool slightly. In a mixing bowl, combine the cooked lentils with smoked paprika, cornmeal, cornstarch, salt, and pepper. Mix well until everything is evenly distributed.

Add the Mozzarella

  • Gently fold in the diced mozzarella, ensuring that the cheese is evenly incorporated throughout the lentil mixture without breaking it down too much.

Shape the Croquettes

  • Using a spoon or your hands, scoop out a portion of the mixture and shape it into small balls or patties, about the size of a golf ball. Repeat until all the mixture is used up.

Coat and Bake

  • Place the sesame seeds on a plate. Roll each shaped croquette in the sesame seeds until fully coated. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper. Arrange croquettes spaced apart on the sheet.
  • Bake for 25-30 minutes, or until golden brown and crispy on the outside.
