Ingredients

  • 2 medium peaches pitted and sliced
  • 1 medium red onion thinly sliced

  • 1/2 teaspoon mustard seeds

Instructions

Prepare the Fruit and Onion

  • Start by washing your peaches thoroughly. Pit and slice them into thin wedges or half-moons, depending on your preference. Thin slices work best because they absorb the pickling liquid faster. Next, peel and thinly slice the red onion. Thin slices ensure the onions soften quickly and blend well with the peaches.

Make the Pickling Brine

  • In a small saucepan, combine apple cider vinegar, water, sugar, and salt. Heat the mixture over medium heat, stirring occasionally until the sugar and salt dissolve completely. This warm brine will infuse the peaches and onions with flavor as they soak.
