Ingredients

  • 10 ounces top sirloin
  • Freshly ground black pepper
  • Salt
  • 1 cup sliced mushrooms
  • 1 green onion thinly sliced
  • 1 clove garlic diced
  • 1 cup beef broth
  • 2 tablespoons sour cream
  • 1 tablespoon Dijon mustard
  • Steamed green beans for serving

Instructions

Step 1: Prepare the Steak

  • Begin by preheating your broiler. While that is heating up, season the 10 ounces of top sirloin generously with salt and freshly ground black pepper on both sides. Let the steak rest at room temperature for about 15 minutes.

Step 2: Sauté the Mushrooms

  • In your skillet, heat a tablespoon of oil over medium heat. Add the sliced mushrooms, diced garlic, and a pinch of salt. Sauté for about 5 minutes, or until the mushrooms are golden and tender. Remove from the skillet and set aside.

Step 3: Broil the Steak

  • Once the broiler is ready, place the seasoned steak on a broiler pan. Broil for about 4-5 minutes on each side for medium-rare, adjusting the time based on your preferred doneness. Use a meat thermometer to check the internal temperature (135°F for medium-rare).

Step 4: Make the Mustard Sauce

  • In the same skillet used for the mushrooms, pour in 1 cup of beef broth and bring to a simmer. Stir in 2 tablespoons of sour cream and 1 tablespoon of Dijon mustard. Whisk until well combined and heated through. Add the sautéed mushrooms back to the skillet and mix well.

Step 5: Serve It Up

  • Once the steak is done, let it rest for a few minutes before slicing. Serve the steak topped with the creamy mustard sauce and garnish with thinly sliced green onions. Pair it with steamed green beans for a complete meal.

Notes

  • For a lighter sauce, substitute sour cream with Greek yogurt.
  • Leftovers store well in the fridge up to 3 days; reheat gently to maintain texture.
