Pizza Smothered Chicken

Tender marinated chicken topped with pizza sauce, your favorite pizza toppings, and melted mozzarella for a quick weeknight twist on pizza.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup Italian dressing for marinating
  • 1/2 cup pizza sauce about 2 Tbsp per breast
  • favorite pizza toppings (pepperoni, mushrooms, sausage, peppers) use desired amount, sliced or prepped as needed
  • 1 cup shredded mozzarella cheese

Instructions

  • Place the 4 chicken breasts in a resealable bag or shallow dish and pour in 1 cup Italian dressing. Seal or cover and refrigerate to marinate for at least 1 hour or up to overnight.
  • Remove chicken from the marinade and discard the excess dressing. Grill over medium heat or heat a skillet over medium; cook the chicken until fully cooked through, about 12–14 minutes total, flipping halfway. Internal temperature should reach 165°F (74°C).
  • Preheat the oven broiler. Line a rimmed baking sheet with foil or parchment and place the cooked chicken breasts on it.
  • Spread about 2 tablespoons of pizza sauce on top of each chicken breast. Distribute your chosen pizza toppings evenly over the sauce.
  • Sprinkle 1 cup shredded mozzarella evenly over the topped chicken. Place the baking sheet under the broiler and broil until the cheese is melted and bubbly, 1–3 minutes—watch carefully to avoid burning.
  • Remove from the oven and let rest 2 minutes before serving.

Notes

  • Marinate at least 1 hour for best flavor.
