  • 3 cups Fresh pineapple, diced (about half a large pineapple)
  • 1 Red bell pepper, diced
  • ½ cup Red onion, diced (about half an onion)
  • 1 Jalapeño, finely chopped seeds and ribs removed
  • cup Cilantro, chopped
  • 2 tablespoons Lime juice
  • ¼ teaspoon Salt

Instructions

  • Step 1: Prepare the Pineapple. Start by cutting your fresh pineapple. Cut the top and bottom off, then slice down the sides to remove the tough skin. Once peeled, remove the core and chop the pineapple into small, bite-sized pieces, measuring out 3 cups. Set aside.
  • Step 2: Dice the Vegetables. While your pineapple is resting, cube your red bell pepper and dice the half red onion. For the jalapeño, make sure to slice it in half, remove the seeds and ribs for less heat, and finely chop. Remember to wash your hands after handling the jalapeño to avoid any irritation!
  • Step 3: Mix Everything Together. In a large mixing bowl, combine the diced pineapple, red bell pepper, red onion, and jalapeño. Add in the chopped cilantro for freshness and aroma.
  • Step 4: Add the Lime Juice and Salt. Drizzle the lime juice over the mixture and sprinkle with ¼ teaspoon of salt. The lime juice not only adds flavor but also helps to preserve the freshness of the salsa.
  • Step 5: Toss and Serve. Gently toss all the ingredients together until well combined. Let it sit for about 10-15 minutes at room temperature before serving. This resting time allows the flavors to meld beautifully.

Notes

For extra sweetness, use ripe pineapples. Adjust the heat by playing with the amount of jalapeño. This salsa is best enjoyed fresh but can last in the fridge for a day or two.
