Ingredients

  • 8 ounces cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 1/2 cup mayonnaise
  • 1/4 cup pimentos drained and chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper optional
  • Salt to taste
  • Black pepper to taste
  • 8 slices white bread

Instructions

  • In a mixing bowl, combine the softened cream cheese, shredded sharp cheddar, shredded Monterey Jack, and mayonnaise. Use an electric mixer or spatula to blend the ingredients until smooth and creamy.
  • Fold in the chopped pimentos, garlic powder, and optional cayenne pepper. Season with salt and black pepper to taste. Mix until everything is well combined.
  • Take one slice of white bread and generously spread the pimento cheese mixture on top. Place another slice of bread on top to create a sandwich. Repeat this process for the remaining slices of bread.
  • Cut the sandwiches diagonally or into quarters for easier handling. Serve immediately, or cover and store in the refrigerator for later.
