Ingredients

  • 1 (120-ounce) bag frozen waffle fries
  • 2 cups shredded sharp cheddar cheese
  • 1 cup cream cheese softened
  • 1/2 cup mayonnaise
  • 1/4 cup diced pimentos drained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste
  • 3 tablespoons chopped fresh chives
  • Pickles for serving

Instructions

  • Preheat your oven according to the instructions on the frozen waffle fries package. Spread the fries evenly on a baking sheet in a single layer. Bake until golden brown and crispy, about 20-25 minutes, flipping halfway through.
  • While the fries bake, combine softened cream cheese, mayonnaise, shredded sharp cheddar, diced pimentos, garlic powder, onion powder, salt, and pepper in a large mixing bowl. Mix until smooth and fully combined. Adjust seasoning if needed.
  • Once fries are done baking, remove and let cool for a couple of minutes. Spread a generous layer of the pimento cheese mixture over the hot fries, covering them well.
  • Top the cheesy fries with chopped fresh chives. Serve with pickles on the side and enjoy while hot!
